It’s late April when we’re recording this so still in lockdown but I’ve had such a joyous chat with someone who I’ve never met before… my guest today Mark Selby from Wahaca. He’s a real titan of the casual dining industry and has a great story of matching theatre with great food, great hospitality; and matching the warmth, vibrancy and colourfulness from a far away. Sometimes you have these podcast chats in the diary and you’ll be a little nervous because you’ve never spoken to this person before, but today I’ve absolutely had my socks blown off because we didn’t even get a chance to do an intro properly… Mark was straight out the blocks and effervescent to talk about this amazing industry, the situation we’re in, how he met Tommi and the birth of Wahaha.
